Apple Spiced Cake
Preheat your oven to 350°F and grease your three 8-inch cake pans with oil and flour, then line the bottoms with parchment paper.
In a large bowl, whisk together the eggs, granulated sugar, brown sugar, apple puree, vegetable oil, cinnamon, allspice, and vanilla extract until smooth and well combined.
4 large eggs, 1 cup(200g) granulated sugar, 2 cups(510g) Apple purée, 1 cup(236.6ml) vegetable oil, 3 teaspoons cinnamon, 1 teaspoon allspice, 2 teaspoons vanilla extract, 3/4 cup(165g) brown sugar
In a separate medium bowl, whisk together the flour, baking powder, baking soda, and salt. Gently fold the dry ingredients into the wet ingredients using a rubber spatula, mixing just until no flour streaks remain.
Divide the batter evenly between the three prepared pans and smooth the tops. Bake for 30–40 minutes, checking at 30 minutes with a toothpick - it should come out clean or with a few moist crumbs.
Let the cakes cool in the pans for 10–15 minutes, then carefully run a knife around the edges and flip each onto a wire rack to cool completely.
Cream Cheese Frosting
For the frosting, beat the butter and vanilla extract on medium speed until light and fluffy.
