To make this indulgent treat, start by finely chopping the dark chocolate.

Add Heavy cream and chocolate in a small pan. Melt chocolate in low heat, stirring constantly, until you're left with a smooth chocolate mixture. Be careful not to let it boil.
2/3 cup(157.7ml) heavy whipping cream
Remove from heat, add rum and vanilla, and mix well to ensure an even distribution of flavors.
1/2 teaspoon(0.5teaspoon) pure vanilla extract, 2 tablespoons rum
Cover the chocolate mixture and refrigerate it for at least 1.5 hours or until it becomes firm enough to handle.
Once chilled, use a spoon or a small cookie scoop to scoop out portions of the mixture and roll them into 1-inch balls (preferably with cold hands). Place the truffle balls on a parchment-lined tray.
Place the cocoa powder in a shallow bowl, place each truffle in the bowl of cocoa powder, then roll it until it's well-coated. If the truffles have softened during the rolling process, chill them again in the refrigerator for about 30 minutes to firm up.
