Instructions
Grease an 8-ounce mini loaf pan, small ramekin, or muffin tin with cooking spray. Then, preheat your oven to 350 F.
Take 1/2 a single overripe banana and mash it up with a fork in a small bowl. Add in the oil, egg yolk, vanilla extract, and sugar, to the mashed banana and mix.
1/2 ripe banana, 1 tablespoon vegetable oil, 1 large yolk, 1/2 teaspoon(0.5teaspoon) pure vanilla extract, 1 tablespoon granulated sugar
Stir in the cinnamon, baking powder, salt, and flour until everything is just mixed.
Pour the batter into your prepared ramekin and pop it into the center of your preheated oven for around 20 minutes, or until a toothpick inserted into the center comes out clean.Once it's done, take it out of the oven and let it cool on a wire rack, or enjoy warm banana bread before it's completely cooled.
