These simple Homemade OREO Truffles are made with only 3 ingredients, they're soft and fudgy from the inside, dipped in creamy white chocolate, and sprinkled with more OREO crumbs on top.
Prepare a baking sheet with wax paper and set aside. Crush your OREO cookies into fine crumbs using a food processor or a rolling pin. Scoop out 2 Tablespoons of the cookie crumbs and set them aside

Add the full-fat cream cheese and mix until a thick paste is formed. Using a small cookie scoop or a tablespoon, measure the mixture and use your hands to shape them into small balls. Place them in the cookie sheet and freeze for 30 minutes.

In the meantime, place the chocolate in a microwave-safe bowl and melt the white chocolate in the microwave, in 30-second intervals, or use a double boiler and use the water bath method. Take a look at my post Melting Chocolate 101 for more information on how to properly melt the chocolate.
3 Cups(396g) White chocolate
Remove the balls from the freezer. Start by sinking your truffle into the melted chocolate until fully covered, then slide the edge of a fork under the truffle and lift it up. Tap into the edge of the bowl and slide the bottom of the fork into the edge of the bowl to get rid of the excess chocolate. Use a toothpick to slide the truffle out of the fork and into the prepared baking sheet. Sprinkle the top of the truffle immediately with the remaining cookie crumbs.
Refrigerate for 30 minutes until the chocolate shell is completely set and serve immediately.
