Ingredients
1Cupunsalted butterat room temperature
12ouncesgoat cheesesoftened
4ouncescream cheesesoftened
2teaspoonsvanilla extract
1teaspoonlemon juice
1/2teaspoonsalt
6Cupspowdered sugarsifted
Instructions
Over a large bowl of an electric mixer (or hand mixer) with the paddle attachment, cream butter on medium speed for 1 minute, until light and fluffy. Add cream cheese and goat cheese and beat until well combined (do not overbeat or the frosting could become runny)
Frosting is too runny and won’t hold its shape: This could happen if you over beat it. To fix this, simply add more powdered sugar until you reach the desired consistency. You can also refrigerate it until thick enough to spread
The frosting has a lumpy texture. This could happen if your cream cheese or goat cheese is not at room temperature before mixing. Make sure to let them sit out for at least 30 minutes before mixing. If the lumps are still present, strain the mixture through a fine-mesh sieve to remove any clumps.
Weird color or texture in frosting. This could happen if your cream cheese or goat cheese is expired or spoiled. Always check the expiration date before using any dairy products. If the cheese is past its prime, it’s best to discard it and start fresh.
