Equipment
1 popsicle mold
1 small sauce pan
Ingredients
1literwater
1cupgranulated sugar
5largelime juice
2largelime zest
Instructions
Start by combining the water and sugar in a small pan on the stovetop over medium heat. Stir until the sugar is completely dissolved to make a basic simple syrup.
Remove the pan from the heat, then add fresh lime juice and lime zest. Stir well so everything combines evenly. This lime popsicle mixture will smell amazing—tart, bright, and zesty.
Carefully pour the blended popsicle mixture into your popsicle mold. Add popsicle sticks to each and place in the freezer. Let them freeze for at least 5 hours or until completely solid.
To remove, run warm water along the outside of the mold for a few seconds. Gently pull the popsicles out one at a time.
Notes
Add-ons & Substitutions
Here are a few favorite ways to customize:
Sweeteners: Swap the sugar with maple syrup or agave nectar for a touch of natural sweetness and a little bit of extra flavor.
Don’t have popsicle molds? Ice cube trays, muffin tins, or paper cups with plastic wrap and popsicle sticks do the trick.
Bottled Lime Juice: Use bottled lime juice in a pinch, but fresh limes or Persian limes give the best citrus flavors.
Expert Tips
To avoid icy popsicles, make sure your sugar is fully dissolved before adding lime juice. This helps maintain that creamy, smooth texture.
Use an airtight container or freezer bag to store your homemade treats and prevent freezer burn.
For the boldest lime flavor, zest your limes before juicing. It’s the easiest way to keep all the oils and aromatics in your limeade popsicles.
If you like a more tart flavor of lime, reduce the sugar slightly or use a mix of key limes and regular limes.
