Ingredients
Honey roasted Grapes:
5Cupsseedless red grapesclean and dried
2Tablespoonsunsalted buttermelted
2Tablespoonshoney
1/8teaspoonsalt
Goat Cheese Cheesecake:
1Cupheavy whipping creamchilled
16ouncegoat cheeseroom temperature
8ouncefull fat cream cheeseroom temperature
1 1/2Cuppowdered sugar
1teaspoonvanilla extract
1/8teaspoonsalt
Cookie Crumbs:
2Cupsgraham crackersin very small chunks (around 1 1/2 sleeves)
1/2Cupwalnutsin very small chunks
1/2Cupunsalted buttermelted
2tablespoonbrown sugarpacked
Instructions
Preheat oven to 420 F. Line a baking sheet with parchment paper
Toss grapes with butter, honey, and salt until completely coated; distribute in a single layer over a baking sheet and bake for 20 minutes. Let cool completely before assembling
5 Cups(755g) seedless red grapes, 2 Tablespoons unsalted butter, 2 Tablespoons honey, 1/8 teaspoon(0.1teaspoon) salt
Freeze a metal bowl and whisk attachment for 10 minutes. Whip heavy cream until stiff peaks form and set aside
1 Cup(236.6ml) heavy whipping cream
Beat the softened goat and cream cheese on medium speed until smooth and creamy, making sure no lumps are left. Add powdered sugar, vanilla extrac, and salt and mix until well incorporated. Fold in whipped cream. Refrigerate
