Goat Cheese Cheesecake Parfait with Honey roasted Grapes
This easy Goat Cheese Cheesecake Parfait with Honey Roasted grapes is made with a crunchy layer of graham cracker crumbs and walnuts; the middle layer is made of a creamy and tangy no bake goat cheese cheesecake, and to top, Honey roasted grapes.
Don’t be fooled by the name and ingredients of this dessert! it sounds and looks difficult, but it’s one of the easies cheesecakes I’ve made!
The roasted grapes have only 4 ingredients, and they’re deliciously tossed and covered in them, to be later roasted in the oven for 20 minutes.
The goat cheese cheesecake is a no-bake type, so no water baths or crackly tops! this cheesecake is as easy as can be!
Ingredients you’ll need
- Seedless red grapes. Clean and dried
- Unsalted Butter. Melted
- Honey. To roast the grapes
- Salt. To help enhance flavors
- Goat cheese. Room temperature
- Full fat cream cheese. Room temperature
- Heavy whipping cream. Chilled
- Powdered sugar. To sweeten the cream cheese filling
- Vanilla extract. Good quality goes a long way!
- Graham crackers. For the crust
- Walnuts. In very small chunks
- Brown sugar. To sweeten the graham cracker crust
How to make this No-bake Goat Cheese Cheesecake Parfait (with how-to photos
Pre-heat oven to 420 F. Line a baking sheet with parchment paper
Toss grapes with butter, honey and salt until completely coated; distribute in a single layer over baking sheet and bake for 20 minutes. Let cool completely before assembling
Freeze a metal bowl and whisk attachment for 10 minutes. Whip heavy cream until stiff peaks form and set aside
Beat the softened goat and cream cheese on medium speed, until smooth and creamy, making sure no lumps are left. Add powdered sugar, vanilla extract and salt and mix until well incorporated. Fold in whipped cream. Refrigerate
Mix all of the cookie crumb layer ingredients, until butter covers everything and mixture resembles wet sand
To assemble, place a layer of cracker crumbs, then place on top a layer of goat cheese cheesecake. To top, a layer of -cooled- honey roasted grapes

No-bake Goat Cheese Cheesecake Parfait with Honey roasted Grapes
Ingredients
Honey roasted Grapes:
- 5 Cups seedless red grapes clean and dried
- 2 Tablespoons unsalted butter melted
- 2 Tablespoons honey
- pinch of salt
Goat Cheese Cheesecake:
- 16 oz goat cheese room temperature
- 8 oz full fat cream cheese room temperature
- 1 C heavy whipping cream chilled
- 1 1/2 C powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
Cookie Crumbs:
- 2 C graham crackers in very small chunks (around 1 1/2 sleeves)
- 1/2 C walnuts in very small chunks
- 1/2 C unsalted butter melted
- 2 Tbsp brown sugar

Notes
- Remove cream cheese and goat cheese from the fridge 2 hours prior to using
- Let the roasted grapes cool completely before assembling
- You can make the roasted grapes up to 5 days before and store covered in the fridge so it's completely cooled before using
