Add-ons & Substitutions

You can adjust these homemade Pop-Tarts depending on what you have or prefer.

  • Use canned apple pie filling if you need a quicker version
  • Swap fresh apples for pears for a slightly different fruit flavor
  • Add a pinch of nutmeg for a warmer spice blend
  • Skip the frosting if you prefer a less sweet finish
  • Try adding a thin layer of caramel inside for more apple flavor

How to Make

Start by preheating your oven to 380°F and lining a baking sheet with parchment paper. This helps prevent sticking and keeps cleanup easy.

Make the apple pie filling first. In a small saucepan over medium heat, melt the butter. Add the diced fresh apples, brown sugar, granulated sugar, cinnamon, and salt.

Cook for about 3 to 5 minutes, stirring occasionally, until the apples start to soften but still hold their shape.

In a small bowl, mix the cornstarch and water until smooth. Pour it into the apples and stir.

Let it cook for about 30 to 60 seconds until the filling thickens and looks glossy. Remove from heat, then stir in the lemon juice and vanilla extract.

Let it cool completely so it doesn’t soften the dough later.

Prepare the pastry on a lightly floured surface. Lay out the pie crusts so they overlap slightly, then press them together and roll them into a large rectangle.

Trim the edges if needed, then cut into equal rectangles for your homemade Pop-Tarts.

Place half of the rectangles on your baking sheet. These will be the base. In a small bowl, whisk the egg and milk to make the egg wash.

Spoon the cooled apple pie filling into the center of each base, leaving space around the edges of the Pop Tarts.

Lightly brush that border with egg wash. This helps seal everything together.

Place the top rectangles over the filling. Press gently, then seal the edges of the Pop-Tarts with a fork. This step keeps the filling from leaking.

Poke a few small holes on top so steam can escape. Brush the tops lightly with more egg wash for a golden finish.

Bake for 18 to 22 minutes, until the pastries are golden and the edges of the Pop Tarts look crisp. Let them cool completely before adding frosting.

To finish, mix the powdered sugar, milk, vanilla, and cinnamon until smooth. Spread or drizzle over the cooled apple cinnamon Pop-Tarts.

Expert Tips

  • Dice the apples very small so the filling sits flat inside the pastry
  • Cook the filling ahead so it thickens and doesn’t soak into the crust
  • Don’t overfill, or the edges of the Pop-Tarts may open while baking
  • Press and seal carefully so the filling stays inside
  • Add small holes on top to release steam and prevent bursting
