Ingredients

This recipe calls for simple ingredients you can find at any grocery store. Each one helps create a smooth chocolate mixture with a rich texture and balanced flavor.

  • Semi-sweet chocolate (sugar-free): melts into the base and provides the main chocolate flavor
  • Heavy cream: helps create a smooth and creamy chocolate mixture
  • Vanilla extract: adds warmth and enhances the chocolate tastes
  • Stevia: sweetens the truffles while keeping them sugar-free
  • Cocoa powder: coats the truffles and adds a slightly bitter contrast using unsweetened cocoa powder

Add-ons & Substitutions

You can adjust these sugar-free chocolate truffles to match your taste or what you have on hand.

  • Roll the truffles in chopped nuts instead of cocoa powder for texture
  • Add a pinch of salt to enhance the chocolate flavor
  • Mix in a little espresso powder for a deeper chocolate taste
  • Use different coatings like shredded coconut or crushed cocoa nibs
  • Adjust the sweetness slightly depending on your preference

How to Make

Start by placing a small saucepan over medium-low heat. Add the heavy cream, chocolate, and vanilla extract. Let everything warm slowly, stirring often, until the melted chocolate is completely smooth and glossy. This step is important for a smooth chocolate mixture without lumps.

Once melted, remove from the heat and add the sweetener. Stir well and taste the mixture. If needed, add a little more sweetener until it reaches your preferred flavor.

Cover the mixture and place it in the refrigerator for about 1.5 hours. It should firm up enough to scoop but still feel soft when pressed.

Once chilled, use a cookie scoop to portion the mixture. Roll each portion between your hands to form smooth, round truffles. If the mixture feels too soft, let it chill a bit longer.

Place the cocoa powder in a small bowl and roll each truffle until fully coated. The cocoa helps keep them from sticking and gives that classic truffle finish.

Store the finished truffles in an airtight container. Keep them in the fridge so they hold their shape and stay fresh longer.

To store them, place them in an airtight container until ready to eat. Storing them in the fridge will help them last longer
