The Ultimate Granola Bar
This Ultimate granola bar is super easy to make, filled with almonds, oats, goji berries, hemp seeds, and flax seeds; all this held together with semi-sweet chocolate.
It’s like you’re eating a healthier version of a candy bar!

Ingredients needed to make these Granola Bars
- Oats. Whole or quick oats work
- Goji berries. Can be substituted for any dry fruit
- Flaxseeds. Whole or ground
- Hemp seeds. For added protein
- Almonds. Natural. I like using whole for a crunchier bar
- Vanilla extract. Good quality works best!
- Coconut oil. Melted
- Maple Syrup. Pure
- Semi-sweet chocolate. Paleo friendly
- Almond butter. Without any added sugar
- Sea salt

How to make these bars (with how-to photos)
Start by preheating your oven to 350°F. Line a cookie sheet and an 8×8 in baking pan with parchment paper and set aside.
In a medium-sized bowl, combine oats, goji berries, flax seeds, hemp, almonds, vanilla extract, salt, coconut oil, and maple syrup.
Place in a lined baking sheet, distribute evenly, and bake for 20 minutes. Let cool slightly and return to the bowl.



In the meantime, in a medium-sized saucepan on very low heat, melt the chocolate and almond butter and combine until smooth.
Add melted chocolate to the granola and mix until everything is well coated.


Press tightly into prepared 8×8 in pan and refrigerate for 30 minutes or until completely set. Cut into even-sized bars, sprinkle with sea salt, and enjoy!

Variations for Granola bars
- Gluten-free version: These granola bars can be made gluten-free; just change the oats for gluten-free certified oats
- Peanut Butter Granola bars: Change the almonds for peanuts, and the almond butter for peanut butter (no sugar added) to make these peanut butter bars
- Changing Add-ons: you can change the goji berries for any dried fruit of your choice, as well as the almonds for any other nut
How to store these Bars
These bars can be stored at room temperature and in an air-tight container for up to 5 days; place parchment paper in between layers to prevent them from sticking.
If you want to freeze these, store them in an air-tight container with parchment paper in between each bar, and freeze for up to 2 months.
