Vanilla Mango Cake

Mango Cake

A combination of a tangy cream cheese frosting with sweet, fresh mango, and a soft vanilla cake, to make the perfect cake!

Ingredients you’ll need

  • All-purpose flour
  • Baking powder
  • Salt
  • Granulated sugar
  • Butter, room temperature
  • Eggs, room temperature
  • Egg whites, room temperature
  • Vanilla paste (or extract)
  • Milk
  • Ripe mangoes, in small squares
  • Cream cheese, room temperature
  • Unsalted butter, room temperature
  • Vanilla paste (or extract)
  • Powdered sugar, measured and then sifted
  • Lemon juice

Before you start baking

Make sure that your mangoes are ripe, this makes ALL the difference!

For the cream cheese frosting to pipe well, you will have to be careful to not over beat, or it could become runny. If that happens, refrigerate your frosting until hard enough to pipe

You can substitute the vanilla paste for vanilla extract, but if you can get some vanilla paste, I would highly recommend it! it does make a difference!

Vanilla Cake

  • 2 1/2 Cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 Cup granulated sugar
  • 1 Cup butter room temperature
  • 2 whole egg room temperature
  • 2 egg whites room temperature
  • 2 teaspoons vanilla paste or extract
  • 1 Cup milk
  • 1 1/2 Cup ripe mangoes in small squares (the ripe part is really important!)

Cream Cheese Frosting

  • 20 oz cream cheese, room temperature
  • 3 sticks unsalted butter room temperature
  • 3 teaspoons vanilla paste
  • 3 Cups powdered sugar measured and then sifted
  • 1.5 Tablespoons lemon juice


  • Vanilla Cake
  • Pre-Heat oven to 350 f. Butter three 6-in cake pans and line the bottom with parchment paper
  • Over a medium sized bowl mix flour, baking powder and salt. On a different bowl mix butter and sugar for around 3 minutes, until butter’s color turns a lighter shade. Add egg, egg white, and vanilla paste
  • Alternate flour mix and milk, starting and finishing with the flour and mixing until just incorporated. Do not over beat!
  • Bake for 25 min or until a toothpick inserted in the middle comes out clean
  • Cream Cheese Frosting
  • Beat butter and vanilla on medium speed until light and fluffy, around 2 min. Add cream cheese and beat until combined (do not over beat)
  • Gradually, incorporate powdered sugar and beat, until combined
  • To assemble
  • Place the first cake layer and add cream cheese, distribute  1/3 of the mango and place your second cake layer, repeat. Place your last cake layer and frost your cake.
  • Decorate with Wilton tip 2A and remaining mango
