Ingredients for this easy Ice Cream Pie
This recipe calls for very simple ingredients, found in any big grocery store.
Pie Pan or pie plate. I used a 10″ pie pan. You can also use a springform pan
Oreo Cookies. Whole Oreos with their filling
Melted butter. Unsalted, for the Oreo cookie crust
Vanilla Ice Cream. For the filling
Cookies and Cream Ice Cream. For the ice cream filling
Heavy whipping cream. To top the ice cream pie. Can also be replaced by cool whip, but if you have the time, make your own, you won’t regret it!
Granulated sugar. To sweeten the whipped cream; avoid if using cool whip.
How to make this No bake Ice Cream Pie
To make the chocolate cookie crust, you’ll need to add 28 Oreos and the melted butter into a food processor, and grind until fine crumbs. Pour crumbs into the pie pan and press tightly with the back of a measuring cup or the back of a spoon, into an even layer on the bottom and sides of the pan. Refrigerate while making the rest
Take both ice creams out of the freezer and let them soften a bit. Place 10 Oreo Cookies in a bag, then crush them into big chunks using a rolling pin. Over a large bowl, mix by hand the vanilla and Cookies and Cream Ice creams, plus the Oreo chunks, until well combined. Pour mixture into the homemade Oreo pie crust and smooth the top of the pie with the back of a spoon until an even layer is formed. Place in the freezer.
Over a mixing bowl and with a whisk attachment, whip the heavy cream and sugar, until stiff peaks form. Pour on top of the Ice cream pie and use the back of a spoon to create texture and “waves” into the whipped cream. Decorate with Oreo crumbs and freeze for 4 hours or overnight
To serve, cut a piece and drizzle with hot fudge sauce and decorate with some more small pieces of Oreo
Substitutions
For a mint pie: substitute the ice cream for mint chip ice cream, and the Oreos for mint Oreos.
Vegan: Substitute the whipped cream for a vegan version (whipped coconut topping), use a vanilla vegan friendly ice cream and vegan butter
